- 1 cup white rice
- 1 can canned diced tomatoes
- 1 onion
- 2 tablespoons vegetable oil
- 2 garlic cloves
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste
- 2 cups water
- 1 stock cube

Rinse the black beans and soak them in water overnight.
