Ingredients

  • 400 g tempeh
  • 400 ml coconut milk
  • 300 g frozen mixed vegetables
  • 2 tbsp curry powder
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 lime
  • fresh cilantro — to taste
  • salt — to taste
  • black pepper — to taste
  • 200 g basmati rice

Instructions

    Cook basmati rice according to package instructions.

    While the rice is cooking, cut the tempeh into cubes.

    Heat vegetable oil in a large skillet over medium heat.

    Mince the garlic and ginger, then add them to the skillet. Sauté for 1 minute.

    Add the tempeh cubes to the skillet and cook for 4-5 minutes until golden brown.

    Stir in curry powder and cook for another minute.

    Pour in the coconut milk and soy sauce, stirring to combine.
