  • 2 sweet potato
  • 1 pound chicken thigh
  • 2 tablespoon olive oil
  • 1 onion
  • 3 clove garlic
  • 2 carrot
  • 2 stalk celery
  • 4 cup chicken broth
  • 1 can diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • salt — to taste
  • black pepper — to taste

Instructions

    Peel and cube the sweet potatoes. Set aside.

    Heat olive oil in a large pot over medium heat. Add chicken thighs and cook until browned on all sides, about 5-7 minutes per side. Remove from pot and set aside.

    In the same pot, add chopped onion, minced garlic, diced carrot, and sliced celery. Cook until the vegetables are softened, about 5 minutes.
