  • 2 cups red lentils
  • 1 onion
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 1 can canned diced tomatoes
  • 1 cup coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 4 cups spinach
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • cilantro — to taste

Instructions

    Rinse the red lentils under cold water until the water runs clear and set aside.

    Finely chop the onion, mince the garlic and ginger.

    Heat olive oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté for 3-4 minutes until the onion becomes translucent.

    Stir in the curry powder, ground cumin, and cayenne pepper, and cook for another minute until the spices are fragrant.

    Add the rinsed lentils, canned diced tomatoes, coconut milk, and vegetable broth to the pot. Stir well and bring to a boil.
