Ingredients
For 4 servings
- 8 chicken thighs
- 8 tablespoons butter
- 6 cloves garlic
- 2 tablespoons fresh thyme
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons lemon juice
- 4 zucchini
- 1 cup cherry tomatoes
Instructions
- 1
Preheat the oven to 400°F (200°C).
- 2
In a large oven-safe skillet, heat olive oil over medium-high heat.
- 3
Season the chicken thighs with salt and pepper.
- 4
Sear the chicken thighs skin-side down until golden brown, about 5 minutes. Turn and sear the other side for 2 minutes.
- 5
Remove chicken thighs from the skillet and set aside.
- 6
Melt the butter in the same skillet, then add minced garlic and fresh thyme, stirring for about 1 minute until fragrant.
- 7
Stir in lemon juice and adjust seasoning with salt and pepper as needed.
- 8
Return chicken thighs to the skillet, skin-side up, and spoon some of the garlic butter over them.
- 9
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
- 10
While the chicken is baking, slice the zucchini into rounds and halve the cherry tomatoes.
- 11
Toss zucchini and cherry tomatoes with olive oil, season with salt and pepper.
- 12
Lay the vegetables out on a baking sheet and roast in the oven for 15-20 minutes until tender.
- 13
Serve the chicken thighs hot, drizzled with the remaining garlic butter sauce, alongside the roasted vegetables.
