Ingredients

  • 8 eggs
  • 2 cups brown rice
  • 4 cups frozen mixed vegetables
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 4 green onion
  • black pepper — to taste

Instructions

    Cook the brown rice according to package instructions and set aside.

    In a large pan or wok, heat 1 tablespoon of olive oil over medium heat.

    Mince the garlic and slice the green onions, separating the white and green parts.
