  • 2 cups black beans
  • 1 cup frozen corn
  • 2 eggs
  • 1/2 cup flour
  • 2 green onion
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • salt — to taste
  • black pepper — to taste
  • 1 lime
  • 1 avocado
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1/4 cup cilantro

Instructions

    Rinse and drain the black beans. In a large bowl, mash the black beans lightly with a fork.

    Add frozen corn, eggs, flour, sliced green onions, garlic powder, cumin, salt, and pepper to the mashed beans. Mix until combined.
