Ingredients

  • 2 cups chickpeas
  • 4 cups fresh spinach
  • 1 bell pepper
  • 1 onion
  • 3 cloves garlic
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse and drain the chickpeas, and set them aside.

    Chop the bell pepper and onion into bite-sized pieces. Mince the garlic.

    Heat olive oil in a large pan over medium heat. Add the onions and garlic, and sauté until the onions are translucent, about 3-4 minutes.

    Add the bell pepper to the pan and continue to stir-fry for another 3-4 minutes until slightly softened.

    Stir in the chickpeas, ground cumin, and paprika, and cook for another 5 minutes, stirring occasionally.
