Ingredients
For 4 servings
- 1 pound skirt steak
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 12 corn tortillas
- 1 white onion
- 1/2 cup fresh cilantro
- 1 lime
Instructions
- 1
In a medium bowl, combine orange juice, lime juice, soy sauce, olive oil, minced garlic, ground cumin, black pepper, and salt.
- 2
Place the skirt steak in a large resealable plastic bag and pour the marinade over the steak. Seal the bag, ensuring the steak is well-coated. Refrigerate for at least 30 minutes and up to 2 hours.
- 3
Preheat a grill pan or outdoor grill to medium-high heat.
- 4
Remove the steak from the marinade and grill for 4-5 minutes per side or until the desired doneness is reached.
- 5
Transfer the steak to a cutting board and let it rest for 5 minutes before slicing thinly against the grain.
- 6
While the steak rests, finely chop the onion and cilantro. Cut the lime into wedges.
- 7
Warm the corn tortillas on the grill or in a dry skillet until pliable.
- 8
Assemble the tacos by placing slices of steak on the tortillas and topping with chopped onion, cilantro, and a squeeze of lime juice. Serve immediately.
