Ingredients
For 4 servings
- 16 oz wide rice noodles
- 14 oz firm tofu
- 2 egg
- 3 clove garlic
- 2 cups broccoli
- 3 tbsp soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 1 tsp ground white pepper
Instructions

Cook the rice noodles according to package instructions and set aside.

Drain the tofu and pat dry. Cut into 1-inch cubes.

Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the tofu and sauté until golden brown on all sides, about 5 minutes. Remove from the pan and set aside.

In the same pan, add the remaining oil. Add minced garlic and stir-fry for 30 seconds until fragrant.

Add the broccoli and stir-fry for about 3 minutes until crisp-tender.

Push the broccoli to the side and add the eggs to the pan. Scramble them until fully cooked.

Return the tofu to the pan, then add the cooked noodles.

Pour in the soy sauce, dark soy sauce, and sugar. Mix well to combine all the ingredients.
