Ingredients

  • 8 chicken thighs
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 4 cloves garlic
  • 2 stalks lemongrass
  • 1 inch ginger
  • 2 lime
  • 1 cup coriander leaves
  • 2 red chili
  • 2 tablespoons vegetable oil
  • 2 cups jasmine rice
  • 4 cups water
  • 2 tablespoons sugar
  • 3 tablespoons vinegar
  • salt — to taste

Instructions

    In a blender, combine soy sauce, fish sauce, brown sugar, 2 garlic cloves, 1 chopped lemongrass stalk, and 1 inch of ginger. Blend into a smooth marinade.

    Place chicken thighs in a large bowl and pour the marinade over them. Toss to coat and marinate for at least 15 minutes.

    While the chicken marinates, combine sugar, vinegar, remaining chopped lemongrass, 2 chopped garlic cloves, red chili, and a squeeze of lime in a small saucepan. Simmer until sugar dissolves to create the dipping sauce.
