- 400 grams shrimp
- 2 tablespoons red curry paste
- 400 milliliters coconut milk
- 1 red bell pepper
- 1 carrot
- 1 zucchini
- 1 onion
- 2 cloves garlic
- 1 tablespoon ginger
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 2 tablespoons vegetable oil
- 2 cups jasmine rice
- 4 cups water
- 10 basil leaves
- 1 teaspoon sugar
Instructions

Rinse the shrimp under cold water and pat dry. Set aside.

Cook the jasmine rice according to package instructions using 2 cups of rice and 4 cups of water.

In a large pan, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté for 2 minutes until fragrant.

Add red curry paste to the pan and cook for another minute, stirring constantly.

Pour in coconut milk and bring to a simmer.

Slice red bell pepper, carrot, and zucchini. Add them to the pan and cook for 5 minutes until they're slightly tender.
