Ingredients

- 320 g spaghetti
- 200 g canned sardines in oil
- 1 fennel bulb
- 1 onion
- 2 clove garlic
- 3 tbsp olive oil
- 50 g golden raisins
- 30 g pine nuts
- 50 g breadcrumbs
- salt — to taste
- black pepper — to taste
- 2 tbsp parsley

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente, then drain and set aside, reserving some pasta water.

While the pasta cooks, thinly slice the fennel bulb and dice the onion and garlic.

In a large pan, heat 2 tbsp of olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the sliced fennel and cook until softened, about 5 minutes.

Add the sardines (along with their oil), golden raisins, and pine nuts to the pan. Cook for another 3-4 minutes, breaking up the sardines.

Heat the remaining 1 tbsp of olive oil in a small pan over medium heat. Add the breadcrumbs and toast until golden brown, stirring frequently. Remove from heat and set aside.

Add the cooked spaghetti to the pan with the sardine mixture. Toss well to combine, adding reserved pasta water as needed to loosen the sauce.

Season the dish with salt and black pepper to taste, then garnish with freshly chopped parsley and toasted breadcrumbs before serving.
