Ingredients

For 4 servings

  • 2 cups white rice
  • 4 cups water
  • 4 egg
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the white rice under cold water until the water runs clear.

    In a medium saucepan, bring 4 cups of water to a boil, add the rice, and reduce heat to low. Cover and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool slightly.

    While the rice is cooling, dice the onion.

    In a large frying pan or wok, heat the vegetable oil over medium-high heat.

    Add the onion and sauté until translucent, about 3 minutes.
