Ingredients

For 4 servings

  • 2 sweet potato
  • 500 g ground beef
  • 2 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 300 g frozen mixed vegetables
  • 2 tbsp tomato paste
  • 250 ml beef broth
  • 1 tsp dried thyme
  • salt — to taste
  • black pepper — to taste
  • 100 g cheddar cheese

Instructions

  1. 1

Preheat the oven to 200°C (400°F).

  2. 2

Peel and dice the sweet potatoes. Boil them in a pot of salted water for about 10-12 minutes until tender. Drain and set aside.

  3. 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until soft.

  4. 4

Add ground beef to the skillet, cooking until browned. Drain any excess fat.

  5. 5

Stir in the frozen mixed vegetables, tomato paste, beef broth, dried thyme, salt, and pepper. Simmer for 5 minutes until slightly thickened.

  6. 6

Mash the cooked sweet potatoes with the remaining tablespoon of olive oil, season with salt and pepper.

  7. 7

In a baking dish, spread the beef and vegetable mixture evenly. Top with the mashed sweet potatoes and sprinkle shredded cheddar cheese over the top.

  8. 8

Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.

  9. 9

Let cool for a few minutes before serving.
