- 4 cups cannellini beans
- 6 cups vegetable broth
- 4 cups kale
- 2 tablespoons olive oil
- 1 onion
- 4 cloves garlic
- 2 carrot
- 2 celery stalk
- 1 teaspoon thyme
- salt — to taste
- black pepper — to taste

Drain and rinse the cannellini beans, reserving 1 cup to be blended later.

Dice the onion, carrots, and celery. Mince the garlic.

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery, and cook until softened, about 5 minutes.
