  • 4 cups butter beans
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 carrot
  • 2 cups broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons sriracha sauce
  • 1 teaspoon ginger
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 spring onion
  • salt — to taste
  • black pepper — to taste

Instructions

    Drain and rinse the butter beans thoroughly under cold water.

    Chop the red and green bell peppers into thin strips, peel and slice the carrot into thin rounds, and cut the broccoli into small florets.

    Mince the garlic cloves and grate the ginger.

    Slice the spring onions, separating the white and green parts.

    Heat olive oil in a large non-stick pan over medium-high heat.
