Ingredients

For 4 servings

  • 2 cups Greek yogurt
  • 4 tablespoons chia seeds
  • 1 cup milk
  • 2 tablespoons honey
  • 1 cup mixed berries
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Instructions

  1. 1

In a bowl, combine chia seeds, milk, and 1 tablespoon of honey. Stir well and refrigerate for 15 minutes, stirring once halfway through.

  2. 2

While the chia pudding sets, in a small saucepan over medium heat, combine mixed berries, lemon juice, and water. Cook for 5-6 minutes until berries are soft and syrupy.

  3. 3

Remove the berry compote from heat and let it cool slightly.

  4. 4

In another bowl, mix Greek yogurt with vanilla extract and the remaining honey.

  5. 5

To assemble, divide the chia pudding equally into four cups. Add a layer of Greek yogurt on top of the chia pudding in each cup.

  6. 6

Top with berry compote and any extra Greek yogurt as desired.

  7. 7

Serve immediately or refrigerate until ready to enjoy.
