Ingredients
For 4 servings
- 1 cup white rice
- 1 cup brown lentils
- 1 onion
- 2 cloves garlic
- 1 can canned diced tomatoes
- 1 tablespoon vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste
Instructions
- 1
Rinse the white rice and lentils under cold water until the water runs clear.
- 2
In a medium pot, combine the rice, lentils, and 4 cups of water. Bring to a boil over high heat.
- 3
Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice and lentils are tender.
- 4
While the rice and lentils are cooking, dice the onion and mince the garlic.
- 5
In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- 6
Stir in the cumin, paprika, chili powder, salt, and pepper. Cook for another minute until fragrant.
- 7
Add the canned diced tomatoes to the skillet, stirring to combine. Cook for 3-4 minutes until heated through.
- 8
Once the rice and lentils are cooked, drain any excess water and add them to the tomato mixture in the skillet.
- 9
Stir everything together and cook for an additional 2-3 minutes to let the flavors combine.
- 10
Serve hot, seasoning with more salt and pepper to taste.
