Ingredients

For 4 servings

  • 2 sweet potato
  • 500 grams ground turkey
  • 1 onion
  • 1 red bell pepper
  • 3 clove garlic
  • 400 grams canned diced tomatoes
  • 400 grams canned kidney beans
  • 1 cup chicken broth
  • 2 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Peel and dice the sweet potatoes into 1-cm cubes.

  2. 2

Chop the onion and red bell pepper, and mince the garlic.

  3. 3

Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 2 minutes.

  4. 4

Add ground turkey to the pot, breaking it up with a spoon. Cook until browned, about 3 minutes.

  5. 5

Stir in the diced sweet potatoes, red bell pepper, chili powder, and cumin, cooking for another 2 minutes.

  6. 6

Add canned diced tomatoes, kidney beans (including liquid), and chicken broth. Bring to a boil.

  7. 7

Reduce heat to low, cover, and let simmer for 10 minutes, or until sweet potatoes are tender.

  8. 8

Season with salt and black pepper to taste. Serve hot.
