Ingredients

For 4 servings

  • 8 eggs
  • 2 cups Greek yogurt
  • 4 cups baby spinach
  • 1 red bell pepper
  • 1 onion
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

    Preheat oven to 350°F (175°C).

  2. 2

Chop the onion and red bell pepper into small pieces.

  3. 3

In a large oven-safe skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sautéing until onion is translucent, about 3-4 minutes.

  4. 4

Add baby spinach to the skillet and cook until wilted, about 2 minutes.

  5. 5

In a large bowl, whisk together eggs and Greek yogurt until smooth. Season with salt and black pepper.

  6. 6

Pour the egg mixture into the skillet over the vegetables. Stir gently to combine.

  7. 7

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is set and slightly golden on top.

  8. 8

Remove from oven, let cool for a few minutes, then slice and serve.
