Ingredients

  • 2 cups white rice
  • 1 cup dried lentils
  • 2 tablespoons vegetable oil
  • 1 onion
  • 2 carrot
  • 1 cup frozen peas
  • 3 cloves garlic
  • 1 inch ginger
  • 2 tablespoons soy sauce
  • 3 cups water
  • salt — to taste
  • black pepper — to taste
  • 1 stock cube

Instructions

    Rinse the rice and lentils separately under cold water.

    In a pot, bring 2 cups of water to a boil with a pinch of salt, then add rice. Cover and reduce heat to low, simmering for 15 minutes or until water is absorbed.

    In another pot, add the lentils and 1 cup of water with a stock cube. Bring to a boil, then reduce to a simmer, cooking for about 15 minutes until tender. Drain excess liquid.

    While lentils and rice cook, finely chop the onion, carrots, garlic, and ginger.

    In a large skillet, heat vegetable oil over medium heat. Add onion, garlic, and ginger, sautéing until fragrant and the onion is translucent, about 3 minutes.
