Ingredients

- 2 cups white rice
- 2 cups canned chickpeas
- 1 carrot
- 1 cup frozen peas
- 1 cup canned chopped tomatoes
- 1 onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- salt — to taste
- black pepper — to taste

Rinse the white rice under cold water until the water runs clear.

In a large pot, bring 4 cups of water to a boil, add a pinch of salt, then add the rice. Cook for 15 minutes or until tender. Drain any excess water and set aside.

While the rice is cooking, peel and dice the carrot and onion, and mince the garlic cloves.
