Ingredients

  • 200 grams textured vegetable protein
  • 1 cup brown rice
  • 2 cups water
  • 1 carrot
  • 1 cucumber
  • 1 red bell pepper
  • 2 cups fresh spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the brown rice under cold water, then combine it with 2 cups of water in a small pot. Bring to a boil, cover, and simmer for 15 minutes or until the rice is tender.

    While the rice is cooking, rehydrate the textured vegetable protein by soaking it in hot water for 5 minutes, then drain well.
