Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1/2 cabbage
  • 2 carrot
  • 1 onion
  • 2 egg
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the brown rice under cold water. In a pot, bring 2 cups of water to boil, then add the brown rice. Cover, reduce heat to low, and simmer for 18-20 minutes until rice is tender and water is absorbed.

    While the rice is cooking, finely chop the cabbage, slice the carrots thinly, and dice the onion. Mince the garlic cloves.

    Heat vegetable oil in a large pan over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 2-3 minutes.

    Add the carrots and cabbage to the pan. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.

    Push the vegetables to one side of the pan and crack the eggs into the cleared space. Scramble the eggs until fully cooked, then mix them with the vegetables.
