  • 2 sweet potato
  • 400 g pork sausage
  • 2 tbsp olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 clove garlic
  • 150 g spinach
  • 1 tsp dried oregano
  • 1 tsp dried paprika
  • salt — to taste
  • black pepper — to taste
  • 240 ml chicken broth

Instructions

    Peel and dice the sweet potatoes into 1/2-inch cubes.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat.

    Add the diced sweet potatoes to the skillet, season with a pinch of salt and pepper, and sauté for about 10 minutes, stirring occasionally, until they start to soften. Remove from the skillet and set aside.

    While the sweet potatoes are cooking, finely chop the onion and bell peppers, and mince the garlic cloves.

    In the same skillet, add the remaining tablespoon of olive oil and the pork sausages. Cook until browned on all sides, about 8 minutes. Remove and slice the sausages into bite-sized pieces. Set aside.
