Ingredients

- 600 g firm tofu
- 4 bell pepper
- 1 cup quinoa
- 1 cup canned black beans
- 1 onion
- 2 clove garlic
- 1 tbsp olive oil
- 1 cup diced tomatoes
- 1 tsp cumin
- salt — to taste
- black pepper — to taste
- 0.25 cup cilantro
Instructions

Preheat oven to 375°F (190°C).

Rinse quinoa under cold water and cook according to package instructions.

While quinoa is cooking, slice the tops off the bell peppers and remove seeds and membranes.

Dice the onion and mince the garlic.
