Ingredients

  • 600 g firm tofu
  • 4 bell pepper
  • 1 cup quinoa
  • 1 cup canned black beans
  • 1 onion
  • 2 clove garlic
  • 1 tbsp olive oil
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • salt — to taste
  • black pepper — to taste
  • 0.25 cup cilantro

Instructions

    Preheat oven to 375°F (190°C).

    Rinse quinoa under cold water and cook according to package instructions.

    While quinoa is cooking, slice the tops off the bell peppers and remove seeds and membranes.

    Dice the onion and mince the garlic.

    Heat olive oil in a pan over medium heat, add onion and garlic, sauté until soft.

    Crumble tofu into the pan, stir in cumin, salt, and black pepper, cooking until tofu is lightly browned.
