  • 500 g ground sausage
  • 1 onion
  • 1 bell pepper
  • 2 carrot
  • 2 clove garlic
  • 400 g canned diced tomatoes
  • 1 cup chicken broth
  • 1 tbsp Italian seasoning
  • 2 tbsp olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 cup cheddar cheese

Instructions

    Preheat the oven to 375°F (190°C).

    Peel the sweet potatoes and cut them into 1/4-inch slices. Set aside.

    Chop the onion, bell pepper, and carrot. Mince the garlic.

    Heat the olive oil in a large skillet over medium heat.

    Add the chopped onion, bell pepper, and carrot to the skillet and sauté until softened, about 5-7 minutes.
