- 300 g mushrooms
- 1 yellow onion
- 3 clove garlic
- 4 cups vegetable broth
- 3 tbsp extra-virgin olive oil
- 1 tsp dried thyme
- salt — to taste
- black pepper — to taste
- 2 tbsp fresh parsley

Rinse and drain the pearl barley under cold water.
