Ingredients

For 4 servings

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion
  • 1 carrot
  • 1 red bell pepper
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 2 egg
  • 2 cloves garlic
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the quinoa under cold water.

    In a saucepan, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.

    While quinoa cooks, finely chop onion, carrot, red bell pepper, and garlic.

    Heat olive oil in a large pan over medium heat, add chopped onion, carrot, and bell pepper. Stir-fry for 5 minutes.
