- 800 g canned chickpeas
- 2 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 2 carrot
- 1 red bell pepper
- 1 zucchini
- 4 cups vegetable broth
- 400 g canned tomatoes
- 1 tsp ground cumin
- 1 tsp paprika
- salt — to taste
- black pepper — to taste
- 100 g spinach
- fresh parsley — to taste
Instructions

Drain and rinse the canned chickpeas under cold water.

Dice the onion and mince the garlic cloves.

Peel and slice the carrots, and chop the red bell pepper and zucchini into bite-sized pieces.

In a large pot, heat olive oil over medium heat. Add the onion and garlic, cooking until the onion is translucent, about 3 minutes.
