Ingredients

  • 400 g frozen edamame
  • 1 cup quinoa
  • 2 cups water
  • 200 g cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 lemon
  • 2 tbsp olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside to cool.

    While the quinoa is cooking, bring a pot of water to a boil. Add frozen edamame and cook for 5 minutes. Drain and rinse with cold water.

    Chop the cherry tomatoes in halves, dice the cucumber, and finely slice the red onion.

    In a large mixing bowl, combine cooked quinoa, edamame, cherry tomatoes, cucumber, and red onion.
