Ingredients

For 4 servings

  • 2 cups white rice
  • 2 cups canned black beans
  • 1 onion
  • 2 cloves garlic
  • 1 cup canned diced tomatoes
  • 2 cups frozen mixed vegetables
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt — to taste
  • black pepper — to taste
  • 4 cups water

Instructions

    Rinse the rice under cold water until the water runs clear; drain well.

    Peel and chop the onion and garlic.

    In a large skillet, heat the vegetable oil over medium heat.

    Add the chopped onion to the skillet and sauté for 3-4 minutes until softened.

    Add the garlic, cumin, chili powder, salt, and pepper, and sauté for another 1-2 minutes until fragrant.
