Ingredients
For 4 servings
- 2 chicken breast
- 1 lemon
- 2 tablespoon olive oil
- 6 cups mixed salad greens
- 1 cucumber
- 1 cup cherry tomatoes
- 0.5 red onion
- 2 tablespoon parsley
- salt — to taste
- black pepper — to taste
Instructions
- 1
Juice the lemon and set aside the juice.
- 2
In a bowl, mix the lemon juice, olive oil, salt, and black pepper to create a marinade.
- 3
Pound the chicken breasts to even thickness and coat with half of the marinade. Let it marinate for 5 minutes.
- 4
Preheat a grill or grill pan over medium-high heat.
- 5
While the chicken is marinating, slice the cucumber, halve the cherry tomatoes, and thinly slice the red onion.
- 6
Grill the chicken breasts for about 5 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a couple of minutes before slicing.
- 7
In a large bowl, combine mixed salad greens, cucumber, cherry tomatoes, red onion, and chopped parsley.
- 8
Slice the rested chicken and arrange it over the salad.
- 9
Drizzle the remaining marinade over the salad and toss gently to combine.
- 10
Serve immediately.
