Ingredients

  • 1 cup brown rice
  • 1 cup dried lentils
  • 1 carrot
  • 1 onion
  • 1 cup frozen peas
  • 2 tablespoon vegetable oil
  • 1 tablespoon curry powder
  • 2 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 4 cups water

Instructions

    Rinse the brown rice and lentils under cold water and drain.

    Dice the carrot and onion; mince the garlic cloves.

    In a large skillet, heat vegetable oil over medium heat.

    Add diced onion and minced garlic, sauté until the onion is translucent, about 3 minutes.

    Add curry powder and cook for another minute until fragrant.

    Stir in the rinsed brown rice, lentils, diced carrot, and water. Bring to a simmer.

    Cover the skillet, reduce heat to low, and cook for 15 minutes.
