Ingredients
For 4 servings
- 1 cup white rice
- 2 cups water
- 2 tablespoons olive oil
- 1 onion
- 2 cloves garlic
- 1 bell pepper
- 1 carrot
- 1 cup broccoli
- 3 tablespoons soy sauce
- 1 tablespoon sesame seeds
- salt — to taste
- black pepper — to taste
Instructions
- 1
Rinse the rice under cold water until the water runs clear.
- 2
In a medium saucepan, bring the water to a boil. Add the rice, cover, and reduce the heat to low. Cook for 15 minutes, then remove from heat and let it sit for 5 minutes.
- 3
While the rice is cooking, peel and slice the onion. Mince the garlic cloves.
- 4
Slice the bell pepper into strips and the carrot into thin rounds. Cut the broccoli into small florets.
- 5
In a large pan, heat olive oil over medium heat. Add the onion and garlic, sautéing for 2-3 minutes until fragrant.
- 6
Add the bell pepper, carrot, and broccoli to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- 7
Stir in the soy sauce, and season with salt and black pepper to taste. Cook for another 2 minutes.
- 8
Fluff the cooked rice with a fork and serve it alongside the veggie stir-fry.
- 9
Sprinkle sesame seeds over the stir-fry before serving.
