Ingredients
For 4 servings
- 4 cod fillets
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 0.5 teaspoon cayenne pepper
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cup broccoli florets
- 2 carrot
- 1 red bell pepper
- 1 cup snap peas
- 3 tablespoon soy sauce
- 1 teaspoon ginger
- 3 clove garlic
- 2 green onion
Instructions
- 1
Preheat oven to 375°F (190°C).
- 2
In a small bowl, mix olive oil, lemon juice, garlic powder, paprika, cayenne pepper, salt, and black pepper.
- 3
Place cod fillets on a baking sheet lined with parchment paper and brush each fillet with the spice mixture.
- 4
Bake cod in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.
- 5
While the cod is baking, slice the carrot and red bell pepper, and chop the broccoli florets into bite-sized pieces.
- 6
Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil.
- 7
Add the chopped garlic and ginger, and sauté for 1 minute until fragrant.
- 8
Add the broccoli, carrot, bell pepper, and snap peas to the skillet, stirring frequently. Cook for about 5-7 minutes until vegetables are tender-crisp.
- 9
Add the soy sauce and stir to coat the vegetables evenly.
- 10
Slice green onions and toss them into the skillet with the vegetables. Stir to combine.
- 11
Remove cod from the oven and serve immediately, alongside the vegetable stir-fry.
