- 1 cup white rice
- 2 cups water
- 1 onion
- 1 carrot
- 1 cup frozen corn
- 1 cup canned diced tomatoes
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt

Rinse the white rice under cold water until the water runs clear. Set aside.

Chop the onion and carrot into small pieces. Mince the garlic cloves.

Heat olive oil in a large skillet over medium heat. Add onion, carrot, and garlic, and sauté until the onion is translucent, about 3-4 minutes.
