Ingredients

For 4 servings

  • 2 cups canned black beans
  • 1 cup white rice
  • 2 cups water
  • 1 onion
  • 1 carrot
  • 1 cup frozen corn
  • 1 cup canned diced tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1

Rinse the white rice under cold water until the water runs clear. Set aside.

  2. 2

Chop the onion and carrot into small pieces. Mince the garlic cloves.

  3. 3

Heat olive oil in a large skillet over medium heat. Add onion, carrot, and garlic, and sauté until the onion is translucent, about 3-4 minutes.

  4. 4

Add ground cumin, chili powder, salt, and black pepper, and stir to coat the vegetables with spices.

  5. 5

Add the rinsed rice to the skillet and stir for 1 minute.

  6. 6

Pour in the canned diced tomatoes and water. Stir to combine, then bring to a boil.

  7. 7

Reduce the heat to low, cover, and let simmer for 15 minutes, or until the rice is cooked through.

  8. 8

Once the rice is cooked, add the canned black beans and frozen corn. Stir and cook for another 3-4 minutes until heated through.

  9. 9

Serve hot, adjusting salt and pepper to taste if necessary.
