Ingredients

- 3 sweet potato
- 1 cup brown lentils
- 1 red onion
- 1 cup cherry tomatoes
- 1 cup fresh parsley
- 3 tablespoons olive oil
- 1 lemon
- salt — to taste
- black pepper — to taste
- 2 cloves garlic clove

Preheat oven to 400°F (200°C).

Peel and cube the sweet potatoes, place them on a baking sheet, and drizzle with 2 tablespoons of olive oil. Season with salt and pepper.

Roast the sweet potatoes in the oven for 25-30 minutes until tender and slightly caramelized, turning halfway through.

While the sweet potatoes are roasting, rinse the lentils and place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and set aside.
