Ingredients

- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 onion
- 1 red bell pepper
- 2 cups broccoli florets
- 3 cloves garlic
- 1 tablespoon ginger
- 2 cups canned chickpeas
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions
- 1 tablespoon sesame seeds
- salt — to taste
- black pepper — to taste

Rinse the quinoa under cold water and combine with 2 cups of water in a saucepan. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the water is absorbed and the quinoa is fluffy.

While quinoa cooks, heat olive oil in a large skillet over medium heat. Chop the onion and red bell pepper, then add to the skillet. Sauté for 5 minutes until softened.

Add broccoli florets and continue to cook for another 5 minutes.
