Ingredients

For 4 servings

  • 400 g shrimp
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 250 g broccoli florets
  • 1 red bell pepper
  • 1 carrot
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 1 tsp cornstarch
  • 2 tbsp water
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Peel and devein the shrimp; rinse under cold water and pat dry with paper towels.

  2. 2

Mince the garlic cloves. Cut the broccoli into bite-sized florets. Slice the red bell pepper and carrot into thin strips. Chop the green onions finely.

  3. 3

In a small bowl, mix the soy sauce, lemon juice, cornstarch, and water; set aside.

  4. 4

Heat olive oil in a large pan over medium-high heat. Add garlic and sauté for 30 seconds until fragrant.

  5. 5

Add shrimp to the pan, season with salt and black pepper, and cook for 2-3 minutes until pink and opaque. Remove shrimp from the pan and set aside.

  6. 6

In the same pan, add broccoli, bell pepper, and carrot. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

  7. 7

Return the shrimp to the pan and pour in the soy sauce mixture. Stir well to combine and cook for another 1-2 minutes until the sauce thickens slightly.

  8. 8

Garnish with green onions and serve immediately.
