Ingredients

- 2 cups white rice
- 4 cups water
- 3 eggs
- 2 cups frozen mixed vegetables
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onion
- salt — to taste
- black pepper — to taste

Rinse the white rice under cold water until it runs clear.

In a medium saucepan, combine the rice with 4 cups of water and bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed. Remove from heat, fluff with a fork, and let cool slightly.
