  • 2 can canned tuna
  • 1 cup brown rice
  • 1 red bell pepper
  • 1 cucumber
  • 2 scallions
  • 2 tablespoon soy sauce
  • 1 lime
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat the oven to 400°F (200°C).

    Peel and dice the sweet potatoes into 1-inch cubes. Toss them with 1 tablespoon of olive oil, salt, and black pepper, then spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
