- 1 cup frozen spinach
- 1/4 cup heavy cream
- 1 tablespoon olive oil
- salt — to taste

Thaw and drain the frozen spinach, squeezing out any excess water.

In a bowl, whisk together the eggs, heavy cream, salt, and black pepper.
