  • 1/4 cup milk
  • salt — to taste
  • black pepper — to taste
  • 2 russet potatoes
  • 4 tablespoons olive oil
  • 4 cups baby spinach
  • 2 cloves garlic
  • 2 avocado
  • 2 tablespoons butter

Instructions

    Peel and cube the potatoes into small pieces. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the potatoes and cook for 10-15 minutes, stirring occasionally, until crispy and golden brown. Season with salt and pepper. Transfer to a plate and set aside.

    In the same skillet, add 1 tablespoon of olive oil. Mince the garlic and add to the skillet. Sauté for 1 minute, then add the baby spinach. Cook until wilted, about 2-3 minutes. Season with salt and pepper. Transfer to a separate plate and set aside.
