Ingredients
For 4 servings
- 2 cups yellow split peas
- 2 carrot
- 1 cup frozen peas
- 1 cup frozen corn
- 1 onion
- 2 clove garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 4 cups water
Instructions
- 1
Rinse the yellow split peas under cold water.
- 2
In a large pot, add the rinsed split peas and 4 cups of water, bring to a boil, then reduce to a simmer for about 15 minutes until tender.
- 3
Meanwhile, peel and dice the carrot and onion, and mince the garlic.
- 4
In a large skillet, heat olive oil over medium heat. Add the diced onion, minced garlic, and diced carrot, sauté until the onion is translucent, about 3 minutes.
- 5
Add the cumin and paprika to the skillet, stirring to coat the vegetables evenly.
- 6
Stir in the frozen peas and frozen corn, cooking for another 2 minutes until heated through.
- 7
Once the split peas are tender, drain any excess water and mash the peas slightly with a fork or potato masher.
- 8
Combine the mashed split peas with the vegetable mixture in the skillet, stirring to mix well.
- 9
Season with salt and black pepper to taste.
- 10
Serve the mash hot, garnished with additional paprika if desired.
