  • 1 cup quinoa
  • 2 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 red bell pepper
  • 1 red onion
  • 2 cup kale
  • 2 tablespoon lemon juice
  • 0.5 cup feta cheese
  • 0.5 cup walnuts

Instructions

    Peel and cube the sweet potatoes into 1-inch pieces.
