Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion
  • 2 carrot
  • 2 celery stalk
  • 3 cloves garlic
  • 1 15-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 1 cup brown lentils
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 cups baby spinach
  • salt — to taste
  • black pepper — to taste
  • 1 cup plain yogurt
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh dill

Instructions

    Dice the yellow onion, carrots, and celery. Mince the garlic cloves.

    Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté for about 10 minutes until softened.

    Add the minced garlic and cook for an additional minute until fragrant.

    Stir in the canned diced tomatoes and their juices, vegetable broth, brown lentils, bay leaf, and dried thyme. Bring to a boil.
