Ingredients

For 4 servings

  • 3 cups cooked rice
  • 2 cups frozen mixed vegetables
  • 3 eggs
  • 3 tablespoons soy sauce
  • 2 green onions
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Finely chop the green onions and mince the garlic cloves.

    In a large pan, heat 1 tablespoon of olive oil over medium heat.

    Scramble the eggs in the pan until just set, then remove and set aside.

    In the same pan, add the remaining olive oil and sauté the garlic until fragrant, about 1 minute.
