Ingredients

For 4 servings

  • 8 eggs
  • 300 g frozen spinach
  • 100 g feta cheese
  • 200 g cherry tomatoes
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste
  • 2 cloves garlic clove

Instructions

  1. 1

Heat 1 tablespoon of olive oil in a large pan over medium heat.

  2. 2

Add minced garlic cloves and cook until fragrant, about 1 minute.

  3. 3

Add the frozen spinach to the pan and cook, stirring occasionally, until fully thawed and any excess moisture has evaporated, about 5 minutes.

  4. 4

In a separate bowl, beat the eggs and season with salt and black pepper to taste.

  5. 5

Add the remaining tablespoon of olive oil to a non-stick skillet over medium heat.

  6. 6

Pour the beaten eggs into the skillet, scrambling them gently until just set, about 3-4 minutes.

  7. 7

Add the cooked spinach to the eggs, mixing well to combine.

  8. 8

Crumble feta cheese and add to the mixture, stirring until the cheese begins to melt.

  9. 9

Halve cherry tomatoes and gently fold them into the egg and spinach mash.

  10. 10

Adjust seasoning with salt and pepper as needed before serving.
